BLE Day 46

It’s a new week. I feel fantastic and I’m getting a lot of decluttering done here at the house. Today my food was spot on except that I thought seeds were 1oz when used as a fat and I discovered that it should have been 0.5 oz. But other than that, my lines were bright and clear today and I enjoyed all of my food!

I failed to plan ahead again. Maybe it’s because it’s the weekend. I’ll get back on track because knowing what you’re going to eat gives you a clear path to follow and it’s so much easier!!

Breakfast was my staple meal of hot cereal, fruit, and nuts. Today I didn’t have milk so I enjoyed more nuts than what I usually have!

Lunch found me tired after spending my morning sorting through boxes of papers. It was tedious and taxing work on my brain and since my food wasn’t pre planned, it was all I could do to just put together this ultra simple layout of food. This is the type of lunch I’d pack in a hurry if I had a sack lunch situation. 

Supper was supposed to be spiralized zucchini with marinara and the taco veggie meat, but I was in town and got home too late to do all that cooking. I actually almost went to Chipotle, but missed the turn off and just came home. I put together this salad of kale from our garden, cucumber, a tomato from our garden, pumpkin seeds (1 oz instead of 0.5 oz…oops), and I topped it with the “meat”.  It was very good and a great way to end my day!

I still love this way of life and this morning was a number on the scale that I haven’t seen in over 5 years. It’s all super exciting. I also want to mention that I did 20 push-ups today without stopping and the last ten were not that hard either. I love doing my core exercise rotation and I’m pretty sure I’ll reach my goal of 50 push-ups by my 50th bday on November 16. 

I feel unstoppable right now and I know it’s just a matter of time before I reach and stay at my goal weight!

I’m planning to share how I made my grilled veggies and talk a little about the Soy Curls and I also “made” some fruit yogurt that I’ll be having for breakfast tomorrow. I’ll let everyone know if it turned out yummy or not!

BLE Day 45

I did not pre plan any of my meals on Sunday, which was my Day 45. 

I ate breakfast at my friend’s house because we had to do some planning for Pathfinders and we decided to share brunch before we got down to business. When I’m invited to another person’s house, I do not bring my scale to weigh food. I’m fairly certain my proportions weren’t right on and I think I was over on both grain and fruit. But it was a lovely time and the food was wholesome and delicious. The hostess even made the hot cereal without sugar which was super sweet of her!

Lunch was a quick meal at home. I’m still enjoying my homemade black bean patties with salsa or marinara and these came out of the freezer to be heated up. The corn was from Costco and I’ve been enjoying it all week. We also had Costco peaches and string cheese is always easy. It’s like a lunch of doubles!  I should have cut my cheese in half so there was two of everything!

Supper was also somewhat thrown together at home. I wasn’t really hungry and I didn’t feel like cooking so I kept things very simple again. 

Sunday wraps up the week and my Wellness Journal has served me well for another week of Bright Line Eating!!

Day 40

We are jumping in at Day 40!  Here is a quick look at last week in my Wellness Journal. I have been very faithful in planning my food the night before and then just executing my plan each day. This is a key to success with Bright Line Eating!!

Here is the current week, ready to go!!

I lost another 0.8 ounces today! I love seeing the numbers on the scale going down!!

Before I begin showing my food, I think it’s important for everyone to know that I have never enjoyed cooking. The kitchen has never been my friend and I have never found joy in the process of making food. 

Until now!

The book has truly changed my life and I am having so much fun in the kitchen now. I’m still a beginner cook in my own self evaluation, but I am able to figure out some very tasty things so I will share them here. I am not a fancy food blogger, just a girl with an iPhone, making simple food to nourish a body!!  And so we begin!

 Here is what I ate today.

This lunch was fun to make!

I started off by chopping my garden squash into tiny little cubes. 

I love this chopper so much. It’s so fast and easy to use!

I dumped them in the pan with my veggie taco meat. 

I sautéed that around for a bit and then added my riced cauliflower. 

I used some turmeric and this wonderful seasoning from Costco to season the mix. 

While that was cooking I stepped outside to my bucket garden and snipped off some fresh cilantro. 

I didn’t use very much, just enough for a light sprinkle when my plate was ready. 

The food was looking very yummy!

I set my burner on low and began dumping my salad together. Since everything was basically prepped and already in quart jars, the salad was a snap to make. The tomato and kale are from our garden!  I love this time of year!

Dinner is served. YUM!!

Supper was pretty basic since I wasn’t very hungry from my lunch!

I love easy meals like this!

I enjoyed all my food very much today. Overall today was a great day of meals!

Strawberry Wonton Cups

I saw these first on FB and shared the link to my own wall so I would be able to find it again! I made these last night for my same friends and they were a big hit. I think they would be just as delish with fresh peaches or fresh raspberries!

The top photo is the example from the original blog post. The bottom photo is what I served last night. There wasn’t a drop left!!

These will definitely be made again!

Homemade Salsa

I made this up last night. We had a few friends over and there wasn’t a speck left.

Homemade Salsa…

5 tomatoes
1/2 onion
3/4 bunch cilantro leaves

Dice finely and mix together. Serve immediately!

I’m going to freeze the small jar and see what happens when it thaws. Since salsa is kinda mushy and mixed together anyway, seems like it will come out all right.

But if you have experience that is different, I want to hear about it. I’m going to try another batch next week with my frozen jalapeño peppers from the garden.



Baking Day

I just turned the oven off. I’ve been baking since noon. I never feel like its really worth it because in less than 2 days, the Cinnamon Rolls and Spinach Pockets will be gone. In a week, the bread will probably be gone.

Cooking is like housework. The minute you’re done, it’s time to start again. It’s never ending and must be done over and over again.

I should be happy with my accomplishments. Instead it’s rather depressing because it just doesn’t last long enough.

Teaching is much more rewarding. It can pass from generation to generation and benefit hundreds of people…

In the meantime, we have to eat.

Friends Rock

This past week I made soup.


It was delicious. In fact, it was so good, I wanted to share it with friends, so I put it in the freezer so my family could not devour it. I invited one family, but they had previous plans, so I invited another family to come over Friday night and share our table.

When Friday rolled around, one member of their family was feeling a bit “under the weather”, but instead of canceling the plans, we decided to share the soup at their house instead of ours. This would allow everyone to still get together, while also allowing their younger brother to rest in his room. I also made Cabbage Pockets, and brought avocado for some last-minute guacamole.

I can’t even begin to tell you what a great evening we had. My friend “K” set her table beautifully, with candles and dimmed lighting.


There was gentle music playing, and best of all, we can totally be ourselves with these people! There is nothing better than down to earth friendship, no lost expectations, and just genuine companionship in spending time together. Finding a family where both spouses get along is also a rare treat, but we have found that with this family.

The “cabbage pockets” are on the plate to the left. Everybody absolutely devoured them. I’ll share a recipe the next time I make them. My family decided they should be made at least twice monthly and served in their sack lunches!

At the end of the evening, we brought in our puppy and he just loved every minute of being held, and petted, and loved on! I went away feeling happy, and just grateful that life offers these moments of true joy, and genuine friendship.
